This is one of my favorite movies. I watched that part with the director's commentary on and Coppola said that Brando didn't much care for Hopper and that Brandos outburst was an unscripted manifestation of that. Hopper got pissed and wound up quoting the end of the poem Brando was reading - "The Hollow Men" by T.S. Elliot.

Great movie though, even though you figure out whats going on pretty quickly. How it all plays out is where the movie excels imo.
