The only real way to ensure such an activity is to buy a chunk of his business and become a partner to make sure he doesn't run off with the idea. Simple reason being that you're not actually bringing much to the table when it comes to negotiation as an employee as technically anything you produce at work for an employer in a lot of cases, cedes your right to that intellectual property produced while you work for the company. In fact it could also be seen that as a good employee, you contribute to the upkeep and improvement of the company that you work for, in recompense, you get paid more and credit for the improvement.
But, for what its worth as an entrepreneur myself (my comparative success varies on peoples personal opinion) a good idea remains a good idea even if it doesn't fit the current circumstances so you should squirrel it away for a time that it does, or adapt it to suit the contemporary situation.
