I picked it up from chef Rory O'Connor

I've simplified his to this:
1. Wash and peel skin off beets (one is good enough for one or two people)
2. Shred the beets. (use a hand grader)
3. Squeeze a fresh lemon in a bowl and add olive oil (50/50)
4. mix together with beets
It nice quick tasty dish with no cooking or pans to clean. Hopefully you have access to fresh beets.

It's weird that, apart from Argentina, I'd be hard pressed to tell you what people eat in neighbouring countries because there are so few Latin American restaurants around here.
I'd be surprised if you knew more about Peruvian cuisine than I do... Because all I know is that ceviche exists and my wife had lots of it in Japan
