@LazFX: Woudnt know abou my best dish but my sweet & sour dish is fantastic and my steaks in mushroom sauce with pasta pire and rice are amazing.

dude that sounds frigging goooooood!! even though I don't eat beef...but I bet that would go good with some fish, with the right type like chanterelle/girolle mushrooms, ummmmmmmm

Coming on summer you might want an prawn cocktail recipe Laz, though you can use lobster if you're feeling rich , when I was growing up we used to catch freshwater crays, they where pretty tasty.
Get a dozen or so of them and chuck them into a pot of boiling water, hide your child this time so you don't scar them for life
Half a lemon cut into thin wedges thrown in there with a tablespoon of salt.
Boil for 5minutes, leave them to sit for 30 and then put them under cold running water.
In the meantime, get together
1 teaspoon of curry powder
1 teaspoon of paprika
1 teaspoon of ground ginger
1 cup of celery finely chopped
1/2 cup of mayonaise
1/2 teaspoon djion mustard
1/2 cup of honeydew melon finely chopped
Mix up the above in a bowl until it's all combined thoroughly, peel your crayfish and if they're prawns you can leave them whole or halved, bigger critters you'll need to chop up to size.
Gently combine them with the mayo mix and throw them down on a bed of lettuce in a bowl or glass.

Actually there was this stuff floating around in the UK for a bit...
