Wow, that HK bar looks awesome. I hope to visit there someday. As it stands, the only Asian country I've visited is Japan (3 times), and I love it so much that whenever I have an opportunity to vacation in Asia, I always want it to be Japan. I'll need to branch out eventually!
There are some great bars in Japan, too. One expensive, but awesome choice is the bar in the Mori tower in Roppongi Hills. It's on the same floor as the art museum. Absolutely breathtaking views. One of the few places I'd recommend in Roppongi (the area is just too western to be very interesting to a western tourist... some cool architecture, though).

The bar/restaurant at the hotel we stayed at in Kobe had an amazing view looking west towards the Akashi-Kaikyo bridge (the longest suspension bridge in the world). I can't find a good picture online, but the hotel was the Maiko Villa. It's just down the street from Maiko station which is right under the bridge. All the views from the rooms were amazing. Also hardly any westerners go there, its mainly Japanese travelers and Koreans.
My brother frequented a local bar near there too that was pretty cool as well.
