The Turkish restaurant near us makes INCREDIBLY good quail. Unfortunately, I have no idea how they make it All I know is that it's cooked with awesome herbs/spices in a big fuckoff wood-fired oven.

I have only a george formby grill or a worktop halogen oven to work with. Which sucks for making good sauces.
