im doing a day release course in "professional cookery".. and every week i get a question sheet, about the stuff we had cooked the week before..
maybe you guys like to help me a bit? :p
here are some of the questions on the sheet :

The screaming sweaty toilet gripper:
Lightly bake sole with lemon juice and rosemary. lightly coat with olive oil and salt and roast your prawns over an open flame. Cook the mussels and it doesnt matter what you do, cuz theyll all be rocketing out of your ass in about 30 minutes.
Eat up, and enjoy it while you can, because if you hear a gurgle, thats probably the food you just ate rallying the troops for an ASSault. |

Damn, I thought I was good at cooking. lol I would fail that miserably!
you shouldn't have put those in quotes, cuz then when i quote you, they don't show up to answer.
anyway, i could only answer part of one question. lol horseraddish dish ...prime rib? |

Im sure you will do good in cooking class;)
yup horseradish is served with prime rib.. but i will need to answer with a classical french name of the dish, otherwise he wont approve my answer.. :( |

FILLETS OF SOLE DIEPPOISE
Serves: 6
4 ounces butter
1 tablespoon chopped shallots
12 2-ounces fillets of sole
1/2 cup wine
2 cups fish fumet
4 ounces mussels
4 ounces shrimp
6 medium fluted mushrooms
1 cup velouté sauce
1/4 cup heavy cream
12 fleurons
Butter a baking dish. Sprinkle with chopped shallots.
Fold the fillets in half and arrange in the pan. Pour over the wine, fish fumet, and the mussel cooking juice.
Cover with parchment paper and bring to a boil on top of the stove. Bake at 350 degrees .F (180 C) for about 5 to 8 minutes.
Arrange the fish fillets on a serving platter.
Garnish with the mussels, shrimp, and fluted mushrooms.
Prepare the velouté sauce with the cooking liquid and fish stock.
Stir in the cream and simmer for 10 minutes or until sauce is medium thick. Pour over the fish. Garnish with fleurons and serve hot.
