if it's a prog-melodic-uplifting set in chrono then i would start off with a nice melodic chill like Miro - "By your side" (Miro's rolled Mix) then go into something like Brian Eno - "An ending" (Ascent) (Leama & Moor Mix).

i would agree with that but only if it's mixed out before the melody kicks in because starting with a "classic" such as cafe del mar seems a bit wierd

I like to start my sets with

Fire and Ice - Para Siempre

nice intro and its kinda sad so for me its a great opener i like to start of on a sad note and build into some dirty techy trancers or perhaps go into some uplifting trance.
