Couple reasons:

1. skin tight means they are harder to grab and hold onto by opposing players

2. Special material is lighter and apparently allows greater speed (like 1% or something) due to less wind resistance while skating.

Nike actually spent the last few years developing the jerseys and they are supposed to be a real breakthrough... we'll see if it matters soon enough I guess! Think of sprinters and swimmers wearing those new slick body suits - same idea.
