if it's an important, important gig then i have no qualms with planning out at least the first twenty minutes or so just to get in the groove, and take it from there.
only set i have every planned in my life was a 30 min contest slot
everything else always on the go and i play every week sometimes more than once a week to a crowd at a club- its always different, and always more fun like that

With any luck they tend to be few and far in between, where as the "I wanna play this, and this, and this, and this, and this..." moments are generally abundant.
i find the don't know what to play next moments are the most interesting part of the job... and usually end up being the most creative
i could dj a corporate event with lounge music, or a banging, big room afterhours all with my cd case

the whole point of proper dj'ing is to be able to read a crowd and come up with a unique set of music for THAT night, and THOSE people. that to me is the most fun part of it all. of course you just keep a few classics close by so if you get in a bind, you can throw one on real quick. experiment, have fun - everyone is just looking at the girls anyways 
I have got my music sorted in 4 folders:
1. Mainstream Dance (you know the shapeshifter, Freemasons, Alex Gaudino stuff)mainly radio edits or simple extended versions
2. Club: same stuff as above, but then more uptempo and a bit deeper mixes
3. Trance: The good stuff,real trance 128 /140 no techno or what germans/austrians call "trance" A.K.A. Scooter A.K.A Happy hardcore
4. Techno: Techno and Tribal for deeper grooves
5. NoTaste: All the cheap scooter like happy hardcore and cheezy trance shit. Really don't like this stuff, but sometimes you have to.......
Mind you, i do only family / friends parties etc. sometimes pubs, Where after 3 hours of dance classics and top 40 peoply need to get loose / tired out for 1 or 2 mre hours :-) but nothing professional.
I usually just plan out my 1st 1 or 2 tracks, the crowd will let you know which direction you should go. I have a lot more fun making new mixes on the fly. I have to admit though, like most people, I already know 3-4 tracks to go with every track that is playing, and even the best places to que up, just in case I've lost a lot of my creative edge to free drinks. I've noticed, the more fun I'm having, the more the crowd responds. But then again do what you gotta do to be comfortable in live... Some people need a plan, while i would rather show up, late if anything... already drunk! lol, jk
