One of the best sets I've heard live was Richie vs Ricardo @ Mutek
Ric Y Martin (Ricardo and Dandy Jack) are pretty up there also. Enjoyed it more than just Ricardo on his own.

I forgot to mention (and I'm sure a few people will say that it was nothing special) James Zabiela's Kiss100 set from 2005.

That was before every DJ and their brother had started to experiment with Ableton Live, and the mashups in that set were incredibly tight. I liked a lot of his on-the-fly chops better than the original tracks they came from.
