Another cameo that I'm disappointed didn't make the list was Winona Ryder's appearance as Allison Taylor in the episode Lisa's Rival (S06E02). Not only was this an awesome episode but it had one of The Simpsons' more memorable side story lines: Homer finds an over-turned sugar truck and sells the lost cargo.
