Kind of ironic that you posted something that was not really loungey or deep at all with that comment... lol.
As for Farina, I've been a fan of his for a while now, but that's not the same thing either. His Mushroom Jazz tracks are closer to the first example I attempted here, with the breakbeat, which is what most chillout/downtempo is, and it's great stuff but not house. And his live sets are straight chicago-style bumpy house, not even close to being loungey.
It's actually pretty hard to find tracks in that sweet spot between too minimal and too deep i.e. - tracks that are sparse enough to fade into the background but still interesting enough to actively listen to. The closest I can think of is Move D, but it's sort of hit-or-miss...

There's also Jonah Sharp, who used to go by the moniker Spacetime Continuum. Most of what he does is either ambient or downtempo breaks, but he has some housey ones too:

DJ Jus-Ed is a super good deep house guy. He had a bunker pod cast earlier this year i still listen to. You should be able to still get it on itunes.
Also Wolf & Lamb doesn't really do minimal any more. They are pretty much deep house now. Very deep some times.
