Holy shit. I just made the most amazing fucking sandwich. Bacon and tomato with avocado mayo. I forgot I had half an avocado left so I mixed with a little bit of mayo and spread that on both sides of the toast. HOLY NOM.

Avocados are delicious. I like me a good avocado spread also. Ignore the fact that this recipe is from Rachel Ray:

INGREDIENTS:
1 cup loosely packed cilantro leaves
1 ripe Hass avocado-halved, peeled and pit removed
1/3 cup fresh lemon juice
4 garlic cloves, peeled
2 small shallots, peeled
2 teaspoons kosher salt
� cup canola oil
2 tablespoons extra-virgin olive oil

DIRECTIONS:
In a blender, puree the cilantro, avocado, lemon juice, garlic, shallots and salt until smooth. With the blender running, slowly drizzle in the canola oil and olive oil until combine

my chicken & lemon thyme soup was lovely. Maybe needed more chunks of chicken than shreds but it was tasty as hell, and is now my 2nd favourite soup edging out my brothers father in laws miso, simply because he didn't give me the recipe for it, and every one i've tried has failed.

To Hell with Chicken! I honestly believe it's the most tasteless meat in existence. You literally have to add something to it, in order to make it enjoyable.

Anyway, on the menu for me tonight is..

- Duck Rainbow Soup.
- King Prawns lightly fried with Garlic and Chilly.
- Shredded Beef with Garlic & Pepper.
- More Russian Standard.

that's what I like about it. I can go for something as simple as salt & pepper, something like lemon thyme, or something stronger like sage/shallot. It's versatility is epic, imho.

I do admire the versatility of Chicken, but as a meat on its own, I think it's very unsatisfying. It can bring ingredients together in incredible ways, but I rarely have Chicken by itself.
