being serious, it is really hard to answer as there are very few consistent producers that stay relevant for more than a few years. There are also so many genres. Although I will straight up say that EDM that has a drum beat and 1 chord stab for 10 minutes is shit and not really worthy of consideration.
Trance
SHOKK/Flutlicht ( every track was a monster. before the one member left, the're hit to miss ration was pretty much 100 to 0. They made incredible music tracks, had great production and one of the first to use software when people said it just wasn't possible. Their leads were all VAZ. Lot of artist kinda got close approaching 2000 ie Ferry Corsten but these guys just killed it. Everything came together.
Hard Trance
I suppose SHOKK and Flutlicht also fit here but Scot Project was one of my first influences. One of the first producers to make dance music have balls. I remember going to a rave and they had all this really fucking boring progressive and then this german guy got up and it was when I decided to start making edm. I never liked the UK hard trance stuff. Was just UK hardhouse with melodies on top. It had that generic dance beat that i loath and did not stop disapearing from most dance until like 2004. You know, the ump tiss ump tisss. The german hardtrance was incredibly different and for the time badass. The genre was important because it really was the first time that dance was badass, stopped being so generic and well alot of great tracks were made. There was also an emphasis on not doing what was done. Nobody was using generic 909 808 stuff like every other genre. Layering was really important and i think alot of stuff popped up in this genre first and was later applied everywhere.
House
House before funky disco house and after the italdisco was just brutal. I just don't get how people can enjoy that shit. I think they just did alot of drugs and it brings back memories. It was / is awful boring souless music with no funk. Just shitty music for people that didn't care.
house didn't stop sucking until it started getting funky.
My favorite producer was Olav Bassoski who absolutely blows now but at the time in late 90's made music you could dance to, had a bassline, and could remember the hook. That was a hard thing to find in music at the time. Some of the tracks on his Samplitude collection are just fantastic.Add to that Alan Braxe and that scene.
A little more commercial but still great was Daft Punk.
Fast forward a bunch of years, house was really dying a slow death with that Benassi Bullshit. Wasn't till the French came along again and made it stop sucking. Justice's first few albums were pivotal. They changed house overnight. Kinda took off were Daft Punk stopped.
Kinda a bit of everything.
Marcel Woods. Hard to say what genre he is but he has been consistent for a very long time.
Prydz. same deal.
Newer stuff.
Deamaus 5 / BSOD. PRetty influential in the electro house scene. HIs trance was awful. Faxing berlin is a giant turd. But some people like that passive static bullshit you can just sway and flail while you feel the pills.
Noisia / Skrillex : Say what you want but these guys just made sounds nobody else did. Noisia perhaps more so than Skrillex. Skrillex's version of dubstep , like it or hate it, was extremely novel and cool when it was done. The problem is that nothing ever changed. But those sounds were really neat the first time hearing them.
The glitch stuff by the 2 richards devine and james. Didn't really care for the music but the sound design was great.
I have a particular like for the French. They seem to always to things just a bit different. It has been that way for a very long time from Debussy and Faure to Daft Punk, Justice, Dilemn , Sebastian. Always a little quirky and raw.
I could list alot more of producers but for me , the ones listed are probably the ones i was most influenced by
so just to make a list but bare in mind each are liked for a particular reason. Some on the list have made alot of shit but were great for a few years, Some have been consistent.

Reading this thread again make me realise just how subjective music is. It reminds me of peoples preferences with food types, me I just adore Indian food and nothing else comes even close. Sure, French or Italian can be very refined and special but give me a hot Chicken Tikka Dhansak every time.
Personally it's rythmic elements that truly grab me. People's propensity to find percs and rythmn engaging seems to vary widely. I remember being in clubs or at parties and me and some freinds just would not feel like dancing unless the rythmic and bass side was spot on.
I can enjoy tracks from all edm genres although dubstep is my least fave and glichy electro is too jittery for me so I cant get into a settle enjoyment mindset.
I much admire that early / mid 2000's Ibiza house by Head Kandi - with those ole sounding horns and strings. It doesn't make me as happy as other edm but it was a damned masterclass is sound manipulation and sheer recording quality.
I'll tell you who I think is the worst most overrated edm producer ever is, that Michael Casette guy who got signed to A&B. I think that was his name, some 16 yo. Just the last thing I'd ever want to dance to, just why.

-Airbase his stuff between 2000-2008 is simply brilliant, his discography has few fillers, outstanding melodies with brilliant sound design.
-Sander van Doorn till 2008, specially under Purple Haze alias, he made some of the most ingeniously crafted tracks, some were deep and took you in a journey, others were simply floor bangers. Can't believe he now sounds so poppy :S ***
-Andy Blueman, for someone that does not have a musical background i think the breakdowns and melodies he make are OST worthy with some extra understanding of orchestation.
-Marcel Woods, wicked basslines a pity that now everything he does is farty and all his sounds are overpitched.
-Stefano Noferini, i know he tops all the beatport charts but all his tracks are incredibly groovy.
-Blackmill, to prove that dubstep doesn't mean migrain wobbles.
-Netsky , same as Blackmill.
-Ferry Corsten 99-2000 was brilliant and till 2008 was still worth listening to him.***
-Cirez D and only under this alias because i found that Pryda tracks lack of soul in dancefloor terms.
-Infected Mushroom, till the album "Vicious Delicious" impressed me a lot, you don't need drugs to have a mind travel with their old records, incredibly captivating and very original, tons of production values on their tracks before they pretended to be commercial***
-Ti�sto worth a mention because i always liked... his snares, now i hate adagio for strings with all my soul but it always amazed me the perfect combination of kick, bass,snare and hats making it a dancefloor monster, he is a person that had something that nobody had.
-Dj Splash, i listened to him a lot formerly and from time to time he puts a smile on me, it sounds incredibly cheesy compared to the music i like now but i think there's no obscure happy hardcore, good cheerful melodies.
-Leon Bolier, one of the most underrated producers that it's still alive, now he produces more focusing on the dancefloor but he has made outstanding instrumental pieces and has a very recognizable watermark imprinted in all his tracks while 90% of the producers sound alike.
-Airwave, our fellow TA member one of my fav. tracks ever is his V-One remix of In my memory, a track that from an objective point of view has nothing special but that if i remove it from my mp3 sooner or later i get it back.
*** It's ironic that if we consider that the DJmag is a popularity contest when this artists tried to become more popular they got a punishment in the form of downrankings why they keep with this suicide strategy that damages everyone including themselves is something i still don't understand.
There are some producers that i really got into them for some time like Aly & Fila, Sean Tyas , Richie Hawtin , Paul Kalkbrenner or W&W but they lost their trail soon for me or their music never growed on me like this guys up did (or are doing).
What is worse is that i see a lot of talent that is being taken apart, music as an art is about to die vinyls specially will cost a fortune in 100 years, what happens with greek sculptures or post medieval paintings is going to happen with music, all kinds of music.
If the scientists are right and in 2012 something is going to happen that will disengage all the machines from the cultural point of view it couldn't be better, shit i am being nostalgic right now never been a culture freak but books, paintings, music, films, even videogames were better somehow we had to return to this point.
Off to bed, i need to sleep.
