I was waiting for this predictable "New York Pizza" post. I'm surprised it took so long.

True. There are all these hillbilly shacks around downtown atlanta which serve some of the best ribs, fried chicken, gritz and greens i have ever tried.

haha yeah. In Sacramento there is this Chinese food place that I love. The thing is in an older, unkempt strip mall area (the welfare office used to be in the area lol.) That place makes some of the BEST Chinese food EVAR.

i highly doubt anything in there (besides the ingredients) was made after 1980.

truth. i am a huge fan of hole-in-the-wall type places.

i'd choose an authentic dimly lit slighty dirty and falling apart place over a nice swanky lavish restaurant any day.

Also little tiny shack near geogia tech has the best cuban sandwhiches ever.

They are so good and so popular they only open for lunch (3 hours) and then they close the entire day

When my a bunch of us go to SF there is this seriously random, holy-in-the-wall place, called Snow Garden (I think that is the name anyways), and every time we go there, they serve us TONS of food. And it is fucking delicious. The storefront is like 15-20 feet wide. Really narrow but goes back far. So delish.

Neat. I should go there with Pierre. He has never had a cuban sandwich. My mom only made media-noches when he was here.

Posted by elFreak on Oct-08-2008 16:44:

rapini , arugula, pine nuts, garlic, proscuitto = win

with hardly any cheese.

thin crust i assume? any tomato sauce? what kind of cheese?

that just sounds like a delicious combo and i might try to make it someday.

Posted by elFreak on Oct-08-2008 16:53:

the best pizza always has a thiner crust.

the place i get it from just puts a little fresh mozza (little chunks from the ball not shredded.) and a little provalone.

fresh tomato sauce (key to a great pizza...if it comes out of a can fail)...so easy to make. Red wine, garlic, minced onion, fennel(seed), basil, oregano and strained tomatoes simmered down for a few hours.

too much cheese hides the flavor...every bite on the pizza should be unique imo.

edit: blanche the rapini a little bit...it will cook in the oven, but if it is over cooked it becomes stringy.

The Kebab places are also pretty bad there, normally delicious Doner Kebab is cut striaght from the skewer into a crispy bread or pita/lafa. There it's already cut then heated up in some sort of microwave/oven? Also horrible ingredients. Plus it costs fucking 6 Euro by now. Best Kebab is obviously in Berlin but also here in Vienna.

Only Burger King for me in Amsterdam!

Wow, how terrible for you.

A: When it comes to the Kebab shops, all are not created equal. There are plenty of good ones, you just need to find them (and that isn't particularly difficult).

2: Amsterdam's "New York Pizza" was fine considering the circumstances (i.e. being high as shit and wanting something cheap).

Never said it recreated the wheel, but it did what it was supposed to.

totally agree. i also hate when there are too many toppings on pizza.

thanks Jay - that sounds delicious! might have to try it someday when my kitchen is actually comfortable enough to cook in.

Posted by elFreak on Oct-08-2008 16:57:

I've actually had that here in the States. Not my favorite, but it wasn't anywhere near as offensive as I thought it might be.

buy a pizza stone.

they are cheap and are the best way to get pizzeria crust in a non pizza stove.

the first time i had it rob was in seoul...they certainly made it unique and it was a life saver since a pizza from pizza hut there is like 45$.

i used to have one but my ex broke it when he ran it under cold water right after coming out of the oven.

Posted by elFreak on Oct-08-2008 17:03:

yeah.

the best is when people forget to put flour on it and ruin their pizza by making it stick...it is funny when they try and serve is as something other than pizza to cover their mistake.

Posted by RJT on Oct-08-2008 17:05:

Pro-tip: Pizza stones are also great for flatbreads and boules!

Posted by elFreak on Oct-08-2008 17:07:

or pretty much anything dough that you want crispy on the outside/fluffy on the inside.

i will dig up my nona's pizza dough recipe and post it for you lucid.

trick is soak the dough for a day (after it rises) in honey water.
