Budget meals I've been doing recently:

Wholewheat spaghetti
Olive oil
Spinach
Feta/goats cheese cut into cubes
Cherry tomatoes
Mushrooms sliced
Lean back bacon cut into strips
2 cloves of chopped garlic


Cook spag as directed, drain and put aside.

In the same pan (to minimise washing up), add oil, garlic, mushies and bacon, and fry for 2 minutes.

Add tomatoes and fry for a further minute, than add the spinach and cheese and fry until the spinach has wilted and the cheese has started to melt.

Turn off the heat, and add the spag back to the pan, and stir well to mix it all up.

Serve with some parmesan on top, YUM!


Wholewheat fusilli/penne
Can of tuna
500ml jar of tomato-based pasta sauce of choice
Half a cup of frozen sweetcorn
Spinach
Small zucchini/courgette sliced
Teaspoon of dried chilli flakes
Oil

Boil pasta and corn until pasta is done, and drain.

In same pan, heat oil and fry the zucchini and spinach for a few minutes.

Add the pasta sauce, chilli and flake the tuna into the pan. Stir well til heated through.

Add the pasta/corn back to the pan and mix well.

NOM!

Word up on that one. I use red bell pepper instead of tomato. I also prefer celery salt instead of salt n pepper.

This is a basic dumped down version of a soup recipe I told me wee bro when he went off to uni.

+

:till semi cooked:

Dump in this a hand full of this + one or two of these

:cook for a 20 mins low:

Add water to make it back to the right constancy, chuck in a chicken stock cube (wasn't sure you'd know what the pic was lol) if it still tastes shit after putting in salt/pepper and a little bit of sugar (and if you're getting into it a bit of lemon juice).

Add this if you want to bulk it out and can be arsed:



Can also ditch the veg/stock cube and put in these (raw only, without heads etc.), turn off the heat before you put them in (from the boil). Put them in leave for 3 mins and they'll be well cooked and add a lovely stock of their own (+maybe white wine instead if you can really be arsed).



But if you do the basic one is just onion/mix veg/canned tomato/stock cube. Prawn is actually tasty, basic is more utilitarian. Freeze in little, serving size, microwaveable boxes.

I normally just eat all the prawns if I'm not eating it straight away with a bit of garlic/butter/lemon and bread. Reheated prawns or overcooked are the work of the devil!

Tuna steak + lemon juice + olive oil + garlic puree, leave for a bit.

Cook rice.

Fry steak in a dry pan (oil from above still on it) just sear it, bang bang two mins a size very max for a thick bit.

Rice in a bowl, steak on top and pour the gunk out of the tuna frying pan.

Obviously salt and pepper (put alot of this in the tuna bit at the start) on all parts. And fresh lemon juice at the end.

Steak should be "raw" through most of the middle.

Here is an example I did diff more complicated version (balsamic/oil/garlic/mixed pepper/cloves/fresh basil/...hmmm other stuff too just chucked togeather in 10 mins tho), plus I over cooked it :

Easy pizzas (beat a takeaway ok this one, did em in 15 mins, lol, not pretty but fuck they taste good):

Part baked baguette...baked..

Onion/Passata(canned toms if you want but takes longer)/Garlic/Sugar cooked while you wait.

Split in half... re bake for few mins.

Spread with sauce, add toppings and cheese. Back in to melt cheese.

Done.
