Depends on the size of the brisket. Usually about 1.5 hours/lb is a safe bet, but even the shape comes into play. Smoking it & then adding more charcoal after the smoking phase is done works great b/c then you can roast it at a moderately higher heat. Ribs, 3-4 hours total for 2-3 racks.

Nice on the dual purpose. It's a sweet piece of gear!

& you're right about the lump charcoal. Definitely better, but it takes a bit more of it & a bit longer to get to proper cooking temp.
