Stu you've never had bison? It's great man... red meat with less fat and calories than chicken! Never had kangaroo but i'd try it. Tubularbills is right... aligator is tasty (esp. blackened). I like venison too... just gotta cook it right so it doesn't taste too gamey.

dumb question but what does "Gamey" taste like? I hear that term thrown around to describe certain birds and deer, and on that Andrew Zimmern show where he eats all kinds of "gamey" shit...
how do you know what tastes gamey and what doesn't?
I realize this may be as pointless of a question as asking what fish tastes like..b/c it tastes like fish.
but maybe someone has a useful way of describing it?
