Yer supposed to sort it before hand, rename an Mp3/data tag and play it in winamp...voila.

Oh, and here's a quick run-down for those who are new to Shoutcast...
In order to change the title of your stream, you'll have to re-name a random MP3. When you first begin streaming, play that mp3 in winamp and then stop playing it. The title will end up changing.

It doesn't require stopping. You can do it at any point during your mix. I just suggested the beginning, because unless you have Winamp muted you'll hear the MP3 play.
