And 'gamey' is probably a good way to describe the taste of animals that have to move for a living, unlike most of the ones we're used to.

Anyone who doesn't eat animals for reasons having to do with animal cruelty is absurd. If you come into the universe as an animal then you're subject to the dramas and conditions of being an animal, which includes occasionally being eaten. WTF, no one saves us from the conditions of being human, which also includes occasionally being eaten. We just have to deal with it (as do all other animals). Moreover, if it were the other way around and chickens were 20 feet tall, believe me they wouldn't hesitate to eat us.
The only moral issue that seems valid is the fact that the amount of land and resources used to raise and breed animals like cows for consumption, would feed many many MANY millions more people on earth if the same land and resources were used instead to grow things like grains and other plants for consumption.
As for the kinds of stuff I eat regularly -
Breakfast: 50 - 75 grams of whey protein w/coconut milk / occasionally with wheat free, dairy free pancakes or waffles
Lunch: usually vegetable Pad Thai (Thai food has become standard within the past year)
Dinner: spinach salad w/cucumbers, zucchini, tomatoes, carrots w/ honey balsamic vinaigrette. or if i'm really hungry or worked out a lot during the day, I'll make quinoa and probably have more whey protein before bed.
Pros: no more stomach bleeding
, the owners of my favorite Thai restaurant took me under their wing and taught me how to cook vegetarian dishes really well. Before I could only really cook water and maybe a bowl of cereal. I eat healthier in general now. I've developed a respect for food and eating that I didn't have before. I appreciate everything I eat much more now than before.
Cons: everything else!
maintaining good protein intake isn't as easy as before. if i skip out on the whey protein powder for more than 1 or 2 days, my energy plummets, my vitals plummet, muscles constantly burn, i could sleep for 8 hours and wake up feeling like i spent the whole night running a marathon. it would require much less chicken or beef to meet my protein needs than veggies and they're both less expensive than whey protein. being invited to bbq's, dinners and other gatherings is a drag when it comes to the food. i have a bunch of international friends who are always cooking delicious looking dishes from their home countries, and i'm usually stuck with rice, salad, or just drinking

Yeah, my Uncle has lived with it for years. He does shit like Race Across America and marathons through death valley though, so I guess it doesn't really hold him back. I've wondered if I should get tested for it as of late, skeptical as I am of something as lofty as a 'chronic gluten allergy'.

Didn't read past the second page but here is my two cents.
I love meat. I will never be a vegetarian.
Morally, I don't see what's wrong with killing a cow or a chicken for food. I just don't.. I really don't know why so many people get up in arms about it and claim that meat was never an important part in our evolution.. Have they not ever run their tongue over their teeth? You don't even need to look at fossilized remains, the proof is right there in your own mouth. Incisors and canines are flesh tearing teeth, meaning humans are meant to eat meat.. The molars are grain grinding teeth, meaning we are also meant to eat vegetables. I think it's pretty clear, if you're going to get into the evolutionary theory of it all, humans were meant to be omnivorous.
What I find to be wrong, however, is the amount (and type) of meat people consume.. Westerners, on average, eat something like 8 times the amount of protein as is needed. And most of them eat meat that is so chemically contaminated that, were it a vegetable, it would be illegal to sell it... There is nothing, health-wise wrong with eating meats, but as with everything, moderation is key, and being an informed consumer is key as well.
And as far as vegetarianism, there is nothing wrong with being a vegetarian either, except that I have known all kinds of vegetarians, and a very small percentage of them were actually healthy... Being a vegetarian means that you have to be a conscientious consumer, meaning that you have to be extremely careful with what you eat.. Humans need protein, and unless you take supplements or balance your diet carefully, you run the risk of making yourself very sick.. The number of "bread and cheese"-atarians I know is ridiculous.. Just because you eliminate meat does not make you automatically healthy, nor does it make it ok to live off of cheese pizza and grilled cheese sandwiches and french fries.
most converted vegetarians, esp for medical reasons totally view it as life or death torture.
instead of focusing on all of the things you're NOT restricted to eat, you only focus on what you are restricted on.
If i did that i'd be like 90lbs or dead from starvation...
gotta be much more creative and explore alternatives...food at this point in our evolutionary chain should be fun, something to enjoy, and something to be incredibly thankful for. Eventually we're not gonna have these options, but until then lighten up, and try something new 
It's so fun to constantly hear the same conversation over and over when you mention vegetarianism. People always say the same things! You'd think they'd change it up a little, just for kicks..
