7 course meals are actually pretty small.

a bunch of dishes on one plate is not.

she made fucking bell peppers with rice (probably instant)
they make that shit in school cafeterias, omg get me a reservation.

you can decorate a hamburger to look like a work of art, but guess what it is still a fucking hamburger.
I can have 1 dish and it still be fancy. I dont need a 7 course meal for it to be fancy.

Just a bite or two of each course? I've never had a 7 course meal.

What is an example?

They're just much smaller portions, almost bite sized. The only thing that's relatively "large" is the entree portion and the desert.

quote:

First Course
Gorgonzola Polenta
lemon-basil & sun-dried tomato butter sauce

Second Course
Wild Mushroom Soup
rosemary, merlot, cream, crostini

Third Course
Northwest Wild Greens
green apples, goat cheese and raspberry vinaigrette

Fourth Course
Lemon Sorbet
with fresh mint

Fifth Course
Chicken Amore
almond crusted with blueberries, peaches, & Grand Marinier

Sixth Course
Salmon de Provence
horseradish crust, orange beurre blanc

Seventh Course
Macadamia Cups
passion fruit cream and fresh berries

A 7 course meal is actually really good, it's a great way to get a taste of everything the restaurant has to offer. You should try it. Then maybe you can move onto a 12 course or a tasting menu (my new favorite thing to do ever!!)

7 course meals are very small portions designed to compliment each dish and make the palate react accordingly.

the amount of time and preparation needed to pull it off right is staggering. Even finding the right wines, aperatifs and digestifs to make it a pure progression of the senses can take days of research.

even the fanciest restaurants are not that fancy. The best food is simple, not overpowering while playing on the food's natural strength and showcasing local fresh products.

what jamie made is something you would see that whore rachel ray make with canned tomatoes in 30 minute meals.

i never said it wasn't tasty...it just isn't exactly the kind of recipe they taught us about in culinary school.(yes i went when i was younger).
You learn this recipe on the back of a cambells soup tin

ps a hamburger can be spectacular too...does not mean you will see burgers on iron chef.

They do make them.

fucking truffles on a hamburger...you can tell the ingrediants are free lol.

Here's another example of multiple course meals/tasting menus.

I did this on my birthday at Craft here in Los Angeles:

quote:

Warm Local Sardine, Valencia Orange & Fennel Gastrique

Veal Tortellini, Saffron & Tomato

Black Sea Bass Pot Pie & Shell Beans

Roasted Quail & Apple Crepe

Wagyu Skirt Steak, Savory Bread Pudding & Chanterelles

Blaues Wander Cheese (Bern, Switzerland)

Crme Frache Panna Cotta
Lemon Verbena & Mixed Berry Sorbet

Pineapple Tatin
Avocado & Coconut

Then when I was in New York a few months ago I went to WD~50 and had a variation of this (they change their menu pretty frequently):
quote:
Smoked mackerel, plum, cucumber, morcilla

Grilled corn pebbles, lime mayo, scallion

Hamachi tartare, wakame, sake lees tahini, grapefruit-shallot

Knot foie

Eggs benedict

Crab tail, soybean noodles, cinnamon dashi

Chicken liver spaetzle, pine needle, radish, cocoa nib

Beef tongue, cherry-miso, fried quinoa, palm seeds

Blackberry, honey, sour cream, green tea

Jasmine custard, black tea, banana

Toasted coconut cake, carob, smoked cashew, brown butter sorbet

Yuzu ice cream-marcona almond

They bring each course out one at a time, it's not as if you have 12 dishes on your table at once

the first one looks ace, the second one a bit cluttered, but i would not comment on it until trying. Very ballsy combos, intrigued.

That's WD~50's "thing". They blend food & science to come up with some crazy dishes. It's all very weird sounding and sometimes impossible (I had fried mayo and beef tounge ), but it's AWESOME. If you ever get the chance to check out a place like that I strongly recommend it

Posted by elFreak on Sep-24-2008 19:13:

i am in new york at the end of october for the weekend.

i want names.

edit: nevermind lol

A buddy just graduated from culinary school. A couple days ago I had poached tilefish with a jolly rancher reduction and purple Peruvian potatoes.

The plate was like a Jackson Pollack canvas. The kid is an artist.

I need to marry a pastry chef.

If Jamie took longer than usual to prepare this - then it was special/fancy whatever.

To someone who eats dempster's bread with individually wrapped cheese slices for lunch every day, then stuffed peppers with oregano or whateverthefuck is "fancy".

To someone who eats baked cod with jasmine and mint jelly with a side of sauteed brains all the time, then it takes more to impress them.

A meal is special if you put time and effort into it. That's different for everyone.

Posted by elFreak on Sep-24-2008 19:50:

if jamie is not efficient in the kitchen her man should not pay for it

putting a pop tart in the toaster longer does not make it more special.

Wow, nice.

These kind of meals aren't every day fare, though, are they? More for special occasions?

But, Elfreak, Jamie's meal would be considered a special meal (because of the time and effort) for every day? I mean she works and comes home and fixes this for her bf...

The one at Craft is $95 for 1 person. So yeah, not an "every day" type of thing.

I'm busting balls.

i do all the cooking and i put in the time almost every day (sometimes we eat easy stuff too). If my girlfriend wants to eat it a different way i am fine with that because i still get to enjoy it like i intended it. Doing things solely for the approval of someone else is silly, and if it is the reason you do it you should not bother.

i can pat myself on the back, i am not insecure enough that i need my girlfriend to do this.

Posted by elFreak on Sep-24-2008 20:12:

a 7 course meal every day involves cooking from the time you wake up...no one has the time.

Compare most of your posts to the ones that say "my girlfriend" and it just seems so... odd.

Posted by elFreak on Sep-24-2008 22:18:

hint: i'm not like this irl

also in case of bored googles when she is at work
