Sound quality through 1/8" cords
I'm currently running a RCA > 1/8" cord (3ft) out of the back of my mixer (Vestax PCV-275), to a 20ft 1/8" that runs to my sound card's input, and another 20ft 1/8" back to my speakers. All the cables were purchased at Radio Shack. Am I losing noticable amounts of sound quality by running through all these cables?
In theory yes but unless you got some real expensive speakers I don't think you'll notice a diffference.

You could be losing quality on those 20 foot 1/8 inch cables. You can get away with cheap cables on a short length.
I have a couple 20 footers(generic brand from hardware store etc) for interconnecting some audio equipment and I think there is a quality loss. But it's not a big deal as the 20 foot interconnection is not for serious listening - just occasional monitoring.
I got a 20 foot 1/8 inch headphone extension cable and I definitely notice a quality loss from that - but that cable only cost $2, from one of those dollar stores! It looks reasonable quality with gold plated connectors but the wire must be the cheapest stuff they could get (5 cents a foot maybe).
As a test of those cables, see if you can somehow use them as a headphone extension, and then compare the sound without the exta cable.
