How do I automate in Reason?

I thought u just have it in Overdub mode (while you record) and then turn or adjust whatever I want. Shouldn't that work???

There's one other part to it though. Down in the sequencer screen at the bottom you'll see a list of all your devices and above that a column titled "IN". Make sure you click underneath that on whichever device you're trying to automate, so that little "plug" icon (?) is to the left of the name of the device. Then just hit record and you're ready to go. You can only do one device at a time though. Not sure if that was the clearest explanation but hope it helps.

You can do your knob adjustments live, as you described. For more precise control and to copy and paste automation changes, you can right click on virtually any knob and select "edit automation". This will bring up the sequencer track (in blue) and you can select the pencil tool to draw the automation. Another thing, the "edit automation" option will be greyed out if the device you are trying to automate does not have a "sequencer track". To create a sequencer track, you have to right click on the device and select create -> sequencer track.
