As I'm dropping coins in a roll

The frequency of the sound is makes as it hits the next coin increases. Something interesting to listen to during a boring activity.

It's quite possible that you percieve a change in the pitch because each successive coin falls through smaller and smaller distance as it hits the stack. Try dropping the coins from progressively higher points. If the pitch doesn't change, then what I'm saying holds true. If not, there's more physics to it.

Try rolling silver and gold coinage, much better sounding.

I had thought about that, but I tried it out and the pitch kept increasing anyway
