I made the best, most softest, most chewiest peanut butter-oatmeal cookies EVER. It was a couple days ago though.

My recipe for magic

1 cup butter softened
1 cup white sugar
1 cup brown sugar
2 eggs.

blend thouroughly

add 2 cups rolled oats

blend some more.

2 cups flour.
teaspoon baking soda
teaspoon baking powder

mix well, then sift into the butter/sugar/oat mixture.

Mix till your hearts desire.

Add half cup shredded coconut.

Add whatever 'chips' or 'cracked nuts' you like.

They completed mix should 'look dry' but you will feel the moistness when making little balls (walnut sized) to place on the cookie sheet.

Place on a non stick sheet 2 inches apart.

Bake for 8-10 minutes at 350ish....after the first minute i press the balls down with a fork.

I bake these by eye every time so this recipe is a rough copy, so keep an eye on the dough while mixing and taste often.

If you use more oats, and add nuts(they are salty) use more sugar...if you use less oats/coconut/no nuts then i suggest using less sugar.

Feel free to add more coconut (It can overpower the flavour of the cookie if you do it) I use it because it makes them 'chewy'.

Watch the cookies carefully....they burn easy if using lotsa suga.

They are BEST 2-3 days after. They will be crispy/crunchy the for the first 48 hours....unless you like that DONT EAT THEM. I have no idea the science involved but after about 72 hours they become soft and chewy and SOOOOO GOOOOOD.

You want to make them chewy from the start, make them with a cup of flour.



edit: nm, I see there are 2 cups of flour in the recipe. My bad! I would still use only 1 cup.
