Cubase Questions

Hi guys, I have started messing with Cubase SX 3, and I have a few problems.

One, is that I can not find a way to create my own drum sequence just like I did in FL Studio in the piano roll. Is there actually a way to do it on Cubase' piano roll, or will I need a virtual drum machine like NI Battery to do this?

Second, every time I start a new project, it forces me to start using a rate of 96Khz and 192 Bits, and I need to do the settings so it will always start at the regular 44.1 Khz and 16 Bit, how do I do this? I changed the setting messing around haha but I don't know how to change it back to normal. Any help?
