[Spin-off] Good & Essential non-fiction

Inspired by woscar's thread and Krypton's posting how he doesn't read fiction because it "just doesn't interest him," what are some non-fiction books that you highly recommend? Books that have changed your life, your worldview, or that were central to developing who you are. Books that you can't imagine life without. Books that you think everyone should read.

By keeping it limited to works that are held in everyone's highest regard, I think we can have some good suggestions by the time this thread is over. You can link to some good lists that other people have compiled as well.

Last thing I'm going to say is that the book can be about anything. From cooking to politics to science to self-help to history to creative non-fiction, whatever.

One book I really like is
The Blank Slate: The Modern Denial of Human Nature (http://en.wikipedia.org/wiki/The_Blank_Slate)

This book is responsible for a lot of smart-ass comments that have come out of my mouth during conversations with friends and family. Highly recommended.

Drawing on the Right Side of the Brain by Betty Edwards

The Python programming book has been so helpful in my studying, and Drawing on the Right Side of the Brain is an extremely good book for drawing. You will learn how to draw and how to draw well if you get this book, damn it.
