You get a dummy head and put one microphone in each "ear" so that the two streams of sound give the listener the illusion of being there and using their own two ears to pick up the audio environment.

I know this, but I don't know how to synthesize it.

Maybe I could sample some of it or something to create awesome effects.

True, but there's a lot more than binaural recording going in that. Loads of editing and multitracked panning effects.
