I am an expert on all matters beer so please ask me your questions on beer.

gotcha. i've been getting into it over the past 18 months or so. i've yet to move to all-grain brewing, tho i'm starting to think more seriously about it. everything i've done has been extract w/ grain to this point.

here's a question i guess - favorite breweries? and beers from those breweries (seasonals, yearlies, one-offs, w/e)

I know it's a clich� but in my opinion it is Westvleteren 12.

I think it's an amazing beer with an amazing story. For a beer of it's size it is eminently drinkable with superb body and complex flavour. It is often thought to be a beer that benefits from age but I find it underrated while young.

There are a number of other beers I like almost as much though.

Never have smoked a pipe but I do know a lot of beer fanatics who also enjoy a pipe, and also fine cigars.

What do you specifically mean by barrelling in this case? Because it could mean a number of things.

What is the ideal time period for keeping a beer in the barrel before you transfer it into the commercial bottle?

you know....i was fortunate enough to get my hands on a westy 12 last year and really enjoyed it but i have trouble calling it my favorite beer. i can't disagree with anything you said about it - but when it comes to quads i think the rochefort 10 may be better

Going all grain is a significant step up both in terms of complexity and cost but your beers should benefit and I personally believe it allows for greater control of the final beer.

As for favourite breweries, it would depend on which part of the world, because while I enjoy beer from many countries I have specific tastes at any one time.

Right now I am on a real Belgian kick and have especially been enjoying revisiting my old favourites from Cantillon.

Both fine beers certainly and I would actually find it hard to say which I prefer.

depends entirely on the style.

well how about...let's stick to america for now haha.
i love being out here in socal with access to so many amazing brews, but whenever i visit home i can't help but feel bad about everything i'm missing out west - founders, sweetwater, magic hat, troegs, terrapin, and so on and so on.
