In the sentence "Je ne sais pas"... why do you need the "pas"? If you say "je ne sais", don't you already understand that I don't know?

well usually ne... pas goes together. It's a rule, but what you say is not totally wrong. YOu can say "je ne sais" but it's very rare, you don't say that everyday. I don't know how to explain. It's not familiar french...
