Everyone has their own meaning. For me there is good cheese and bad cheese and it doesn't have much to do with commercialism, it's more of a factor of how tacky the melody sounds. But obviously the worse quality usually appeals to the masses, so that's why people associate popularity with cheese.

LOL. The use of the word 'cheese' for these kind of things did not start with trance. It has been used in the English language for a long time as an adjective of anything that is tacky and of bad taste. For example, the love scenes in a melodramatic but ridiculous movie such as Armageddon are extremely cheesy. Remember the scene with the animal crackers? Well, that was extremely cheesy.
Wearing a boa feather in a club is very cheesy. etc etc etc.
Why cheese? Because it is a food product that is instantly gratifying, yet leaves a foul aftertaste in the long run.

I Think there are some real annoying TA's who say "cheese cheese cheese" al the time, but dont even now what it is...
For example, if they hear the well-known sawtooth sound in a track, they immediately call it cheese
