I guess so you dedicate at least a small point of your life to that other person/people who are deceased. It's just a traditional thing, like handshakes.
It makes more sense if it's for people who fought for your country, I guess.

Personally if I were dead I would prefer people to use it as a reason to do something positive for those still alive rather than sit around for a couple of minutes doing nothing.
