Aren't they actually not that great though? Like they scratch easily or something?

We have some kind of composite with the sunken sink. Super durable.

I would love butcher block counters...but I imagine they would get nasty? I wonder what the care/upkeep is for them.

granite or marble are nice. Quartz is more expensive but I don't like the look of it. As long as you properly upkeep them they shouldnt scratch. buy a cutting board

Granite is porous and does hold bacteria. Granite & especially natural marble can scratch & lose it's appeal over time. I had a Cararra White marble top in my bathroom & after 2 years it looked dull & shitty.

Quartz is the best top out there. Quartz does not hold bacteria like Granite does. It also is twice the strength of granite. What quartz lacks is the natural beauty of granite. Granite has a natural flow to the stone with most colors. While quartz is made by man it looks unnatural.
But recently Cambria quartz has come out with the ability to make quartz tops look like natural flowing stone. Also Cambria is the only quartz product with a lifetime warranty & is 100% made in the USA.
