Yeah, you'd think so. With the boom in home studio/one-man music production, it seems like it would make sense. How many hobbyists need simultaneous access to more than a couple of mono channels/mic preamps? Seems like a mixer with 8 or more stereo channels for electronics (e.g., synths, rack FX) and 2-4 mono channels with pres (e.g., 1 for vox, 1 or 2 for guitars) would make a nice little niche product for one-man warriors.
Anyway, the other thing you could consider (and probably already have) is something in a rackmount format (i.e., as opposed to a console w/faders format). Nady, Alesis, and a few others make some that are reasonably priced (but also lack a lot of features that you'd probalby want in a desk format).
