Elegant Greek dining at Estiatorio Milos in The Cosmopolitan: You can drop $300 a person there at night, or instead have their three-course lunch for $22.14 (plus drinks)! Make reservations ahead of time, not sure if it's Mon-Fri only or weekends as well, but it's really good.
If you like Indian Food, there's the Mint Indian Bistro in a dive strip shopping mall, great lunch buffet was well.
For a hearty omelet at 3am, head over to McMullan's Irish Pub near Orleans Casino. They have a late night food menu with great prices. A couple of years ago, there was an omelette on the menu for $10, and it stated "choose some or all of the following ingredients..." So I said "Guess I'll choose them all" and the guy replied "That's what most do!" Gigantic omelette with potatoes, toast, etc. and pints of Guinness to wash it all down with were also discounted. The late night menu starts at 11pm and goes until early morning, just check it out online first to be sure. I was blown away that this little place is open and serves food 24/7!
"The Egg and I" for awesome omelettes during regular hours. Had the Mexican Omelette there once and I swear it was the best one I have ever eaten! Great service too, can't go wrong there.
I have also wanted to try Carlito's Burritos, as they serve "authentic New Mexican" food. A friend of mine told me about it, and since I'm originally from New Mexico, I have to go sometime! 
Hofbrauhaus Las Vegas for German food and beer. It's a 2/3 size replica of the original in Munich, complete with Oompah band, pretzel girls, bullhorns and spanking paddles. Have a few beers in their liter steins, Oktoberfest kicks off this Saturday at 7pm!
