I'm using SX, but I imagine it's similar.
As far as the VSTs, open up the VST instruments panel. (F11?) Select which one(s) you want from the list. All VST instruments use MIDI tracks, so right click in the track area (not the sequencing area) and goto "Add MIDI track". You'll see the properties for it show up at the left of the screen. Click on the "out: not connected" and choose the VST instrument you want from in there (it will be in a list of the ones you have selected in the VST instruments menu). Next, click on the pencil tool and draw out a section of MIDI. Double click on it and it brings up the editor in which you can make your patterns and use the MIDI CCs.(this is a bit more advanced, but experiment with the velocity).
Make sure you set the tempo of the track (goto the Project menu at the top) and also check out the mixer (F3?). You'll notice a MIDI track and a VST track. You'll want to apply sends, inserts and EQ to the VST track (but again, this is gettin advanced so I'll stop ).
