Remix Packs? What are they exactly, and where can you get them from?

I'm guessing they would have the acapella, a MIDI file and maybe some samples from the original song?

Yup, that's what they contain.

And where can you get them? Nowhere, really, unless you can get them from the artist himself. The Force of Gravity was a part of a remix competition so it was released to the public, usually that is not the case.
