Even when the PSone was around the graphics weren't the best and the console still held strong. That system was around during the end of the SNES/Genesis years, survived SEGA CD and Saturn then went on to compete with Nintendo 64 and Dreamcast *NOTE* That's 4, yes 4, SEGA consoles! 
My point is, even though the graphics may not have been the most ground-breaking the gameplay was definitely there. Gameplay is what drives a game and a system, no argument. While Microsoft and Nintendo have their pretty graphics, they're still not able to pull off a realistic environment like a Sony console can. Metal Gear Solid 3 and the Silent Hill Series (2, 3 and 4) are prime examples of how well game developers can pull off a gritty/grainy environment using the Playstation 2 graphic engine.
I'm sure somebody is going to bring up the new Resident Evil game that is to be released on Gamecube soon, which does look amazing I won't argue that.
