Is paning pretty much moving things from dead center to the left / right channels so that they fit better in the mix? Can you just do this manually without having a panner plug-in?

I used to use Fruity's panner but since I've moved to cubase I haven't seen a plug-in that pans things. I want to make sure I do this right because if done wrong it can kind of mess up the mix (Rio Addicts - "Crossroads" (Original Mix) has a full left pan of a hi hat which is really abbrasive and distracting to the ears).

Directly beneath the track volume fader (the little fader that slides from left to right from 0-127) there is another fader which controls the channel pan. Simply move this fader to the left and the track that you have selected will pan to the left - move it to the right and it will pan to the right. If I remember correctly the numbers run from 0 (dead centre) to 64 (wide) and you can pan according to what you want. Also beneath this fader there is an option called "Inserts". If you click on this you should find another option called "Autopan". Again you can adjust this according to what you want. The best thing to do is to mess around for a while on the autopan to see what everything does. Hope this helps.

What about "ping ponging" when panning. Can you do that in cubase as well?

You can automate the panning and draw exactly what you want. There are nice drawing-tools in cubase like e.g. sine-wave. There are also good free panning-vst-fx out there.
