i haven't seen "sold out" yet but it is possible that the track just gets completely removed. Maybe you'll get a po-up error if the quota is reached. On djdownload.com you often see "sold out".
When the contracts i have with artists expires im expected to give 4 weeks notice for the withdrawl of tracks from their catalog. Besides that tracks can be bought for as much as they are wanted. Though an interesting fact is that labels only can collect cash if they sell over $50 of tracks.
