The only things iTunes might change are the id3 tags. You have to realize that even if iTunes did, for some reason, want to modify the audio data of your mp3s, it would have to decode them, modify them, then reencode them, which would not only add lots of unwanted artifacts but would also be very time-consuming. So, no. Your music is safe, I promise
