Forget southern Europe at the moment, it is too hot. Go there in October, that would be the best time of the year. The best climate at the moment is at the shores of the baltic sea (Germany and Poland) - travelling along the shoreline of the baltic sea is certainly a very nice experience at the moment... and especially for backpackers...
Summer in Central Europe usually lasts until early in September with very high temperatures (>25-30°C) around noon while the temperatures during the night start to drop significantly below 15-20°C in the second half of August...
