In Flames and Iced Earth are my 2 picks for melodic metal.

Cradle of Filth Symphonic Black Metal/Gothic Metal

Dimmu Borgir - Symphonic Black Metal

Enslavement of Beauty - Black Metal/Gothic, 'very' good, kind of obscure but I highly recommend them

Kamelot - progressive/symphonic I guess, again very good

Kovenant - kind of like black metal in space, if that makes sense

Nightwish - great symphonic metal, their new singer sucks nuts (imo), but any of their old stuff is good

Tristania - great symphonic band, kind of hit and miss with some of their songs, but they have amazing stuff

Finntroll kick ass too, for the same reason Rammstein are popular, singing in another language = +10 awsome points

Rhapsody - they're pretty much to metal what the cheesiest, fastest chipmunk-vocaled happy hardcore is to edm. I can never tell if they're being serious or tongue in cheek, but if you can stand the cheese-factor, they're quite good musically. Just don't listen to it when anyone is around to humiliate you about it.
