How to Make a Noise by Simon Cann.

It's not my favourite book but it's worth a read.

To be honest the best thing to do is just have a quick look around the net at the theory of what you're doing (definitions of synthesis types) and then dive in and start trying to recreate sounds.
Its good to sometimes look at the presets from one synth and try and recreate them yourself on another for example...
