Depends on how you wanna structure your set...
If you want to start of in a high key tone(good feeling, uplifting), or steady, low key and mysterious...
I recommend Taste Experience - Highlander(Original or Endgame Mix)
or Boyd Westerman - Loop Liife(original)

True. Very true.
Starting off a set with some heavy breaks isn't bad either...Sasha&Digweed's Northern Exposure:Expeditions Disc 1 starts off with a breakbeat remix of Breeder's Tyrantanic...very cool.
Before you jump on and start your session(practice, recording or even live) collect your thoughts and think about how you would like to move this set, how YOU would want it flow...the opening sets the stage for the next 3 or 4 tracks depending on what type of feel or vibe you are aiming for. After that it's just a matter of personal taste and feel or what the crowd wants.
Ending a set isn't a walk in the park either. Alot of DJs(myself in particular...terrible terrible habit) have a tendency and urge to close out with a big anthem. While it's ok to do that, it, in a way defeats the whole purpose of structuring your set...of course a big anthem will fit good as a closer for any set, but concentrate on a track that has a finishing feel...Fire&Ice's San Antonio is an excellent example...that track sounds like the 'journey' is almost over.
All in all, it's up to you and how you feel about the tracks you drop down.
