Generally, people will give due credit - that is, using the original artist and song name, then a (producer's name remix) after it. I think that anyone who has invested enough time into improving their skills will want to stand on their own merits, and is happy to see other people succeed as well. It's more likely the lesser skilled producers who see production as a competition, who get jealous of other artists, who think "there's only room for a handful of people at the top", who would try to pass someone else's work off as their own, to try to deal with their own inferiority complex. The results might be better than what they usually create, but they're still not going to be of a quality you'd need to be concerned about. If you're providing just MIDI versions of the instruments (this is my preference for remix packs - too many remixes use too many elements of the original mix, and you get a bunch of mixes which all sound largely the same), then people will have to have great production skills to create a great sounding song.
In any case, if someone does claim it as their own work, you'll have plenty of people who can verify when they downloaded your remix pack. There'll be compelling evidence that your song was put out into the public space before the copyright-infringing song came out. The evidence on the infringer's side would have to be as strong - that they could clearly demonstrate that you were able to access/steal their song from them before you put it onto the internet. I can't see how they could manufacture strong evidence of that.
