The Echo is great if you plan on using multiple softsynths at the same time. You can assign each softsynth to one of 8 virtual outputs. The only drawback with it is that it doesn't have a midi interface onboard (if you have external gear, then you'll have to pick up a seperate midi interface to run it all).
I personally use the Audiophile and it's great...
{edit} just re-read your original post and saw that you don't need midi. the echo will be great for you! {/edit}

Yes it records on 16 bit 42Khz max.
I think the sound qualety is good and it has a low latency when you use the ASIO driver. great for softsynths and audio recording.
I use an audigy platinum Ex and it works great for me.
