I usually do it the same way Anthony, Eric, and LoveHate do it - assign a MIDI track to your outboard synth's MIDI channel, set the track to record MIDI, and start turning the knob(s), then go back and edit the automation envelope as necessary. Things can get tricky though if you don't have a dedicated knob for a given parameter (e.g., it's buried in a submenu). The synth manual should have a list of CC#s in the back for each externally controllable parameter - I assume Ableton will let you create an automation lane and assign the envelope to any of the synth's available CC# (or NRPN, RPN, etc.) - if so, you can just draw it in.
