Super Monkey Ball has some awesome breakbeat tracks, I'm amazed they don't get more attention considering it was an otherwise childish (but fun) game: http://www.youtube.com/watch?v=N6L1aW2ACgg Jet Grind Radio had some amazing music too, especially the stuff from Hideki Naganuma, that guy is a fucking genius
I managed to get my hands on a game called AudioSurf the other day. It uses your own music to generate tracks and follows the flow of the song. Its rather intense when you load up some psytrance but can be a much more chilled experience with different types of music.

As Beatflux said, the SSX games had some great tunes. R-Type Delta, Tekken, Wipeout and Sled Storm come to mind. I can't remember the names of a lot of old games.
